The Process

Made in the pétillant naturel style, where the wine finishes its first fermentation in the bottle to capture a soft, natural sparkle, and is bottled unfiltered to keep all its character.

About Greystone

Greystone sits on the limestone slopes of the Omihi hills in the Waipara Valley, North Canterbury, where the Thomas family planted the estate from 2000. Every wine is estate-grown, fully certified organic with BioGro New Zealand, and grown, made and bottled on site, with Dom Maxwell winemaking since the early days. The north-facing limestone hills give the wines their mineral drive and concentration, and a minimal-intervention philosophy lets the soil, vines and season speak for themselves.

Perfect with fresh oysters, summer fruit, or a soft cheese board. The gentle fizz and crisp acidity make it a versatile aperitif.
