Wine Storage

Guide for New Zealand Conditions

Quick Reference: Storage Temperatures

Red Wines: 12-18°C (ideal: 14°C)
White Wines: 8-12°C (ideal: 10°C)
Sparkling Wines: 5-8°C (ideal: 7°C)
Natural Wines: 12-18°C (ideal: 14°C) - store standing up

Consistency matters more than perfection—stable 16°C beats fluctuating 12-18°C

5 Simple Steps to Proper Wine Storage

1. Find Your Coolest, Most Consistent Spot
Look for areas away from heating sources, direct sunlight, and daily temperature changes. Under-house spaces, interior cupboards, or dedicated bedroom corners often work perfectly.

2. Test Temperature Over a Week
Use a basic thermometer to monitor consistency. You want stable temperatures, not perfect ones.

3. Block Out All Light
Wine and sunlight don't mix. Use heavy curtains or cardboard if your space has windows. Even artificial light damages wine over time.

4. Check for Vibrations
Avoid areas near washing machines, heat pumps, or foot traffic. Add padding if needed.

5. Position Bottles Correctly
Reds and sparkling: on their side (keeps corks moist)
Natural wines: standing up (allows lees to settle)
Use wooden crates, wine racks, or sturdy shelves for organization

Creative Kiwi Storage Solutions

You don't need expensive wine fridges—Kiwi ingenuity works brilliantly:

Under-House Storage: Natural insulation and consistent cool temperatures
Bach Clay Banks: Wine boxes stacked against earth banks for natural temperature control
Boat Storage: Between duvets under squabs, or below the waterline away from engines
Pallet Systems: On earth under southern side of house for accessible everyday wines

Wine Type Specific Storage

Red Wines

Temperature: 12-18°C consistently

Position: On their side to keep cork moist, not such an issue with screwcaps.

Duration: Most improve for 2-5 years with proper storage

Tip: Slightly warmer storage enhances winter dinner party wines

White Wines

Temperature: 8-12°C consistently

Position: Can store upright, cork less sensitive than reds

Strategy: Keep selection ready for spontaneous summer entertaining

Serving: Always have properly chilled whites available for unexpected guests

Sparkling Wines

Temperature: 5-8°C (coolest storage needed)

Position: On their side to prevent cork deterioration

Impact: Properly stored sparkling shows an immediately obvious quality difference

Special note: Store Champagne in the darkest, coolest spot available

Natural Wines

Temperature: 12-18°C like reds

Position: Standing up (unique requirement)

Handling: Never shake. let lees settle naturally

Growing popularity: Increasingly featured on NZ restaurant wine lists

Common NZ Wine Storage Questions

Q: Can I store wine without a wine fridge in New Zealand's climate?
Absolutely! Many Kiwis successfully use creative solutions. Focus on consistency and darkness rather than perfect temperature control.

Q: What's the biggest wine storage mistake in New Zealand?
Storing near heat pumps, radiators, or in direct sunlight. Our daily temperature swings can quickly ruin expensive bottles.

Q: How does poor storage affect wine taste?
Dramatically. Poorly stored wine can taste flat, overly acidic, or even vinegary. Proper storage preserves intended flavours and enhances complexity.

Q: How long can I store wine in New Zealand conditions?
With proper storage, most quality wines improve for 2-5 years. Our wines are specifically chosen for aging potential in NZ conditions.

Q: Does storage affect wine investment value?
Yes—both financially and experientially. Proper storage prevents wine waste and ensures memorable entertaining moments rather than disappointing pours.

Seasonal Storage Strategies

Winter: Under-house storage naturally maintains ideal temperatures for reds
Summer: Move lighter wines to coolest available spots—sometimes outdoor cupboards or insulated containers for special occasions

New Zealand's climate requires adaptive storage strategies throughout the year

Dicey Bannockburn Chenin Blanc 2023 … so good

Beautiful wine and great fast delivery!

Excellent quality

If a dry, mineral, Chardonnay with a hint of citrus is your preference, this winner is for you. Extremely elegant. Every mouthful a delight. Can hold its own to any French version.

Fat **** Chardonnay

Can't beat a good oaky chardonnay from California. If you like a creamy oaky chardonnay this is for you. Hard to find something similar in NZ unless you are prepared to pay alot more.

Incredible wine for the money

Never really understood the whole appellations thing but this wine looks tastes and smells like a rose from Provence without the price tag. Loving it..

Mas de Bressades Costières de Nîmes Cuvée Tradition 2023

I am completely taken by the Mas de Bressades cuvee tradition 2023. I really enjoy Cotes de Rhone blanc - this slightly western cousin displays the delights of the mixture of grapes of Rhone origin.

The colour is a good golden hue; there is a complex nose that gives different emphasis with development in the glass. It is a good aperitif or excellent with chicken/fish etc dishes. Wonderful with fish cooked in the air fryer served with lentils and a persimmon sauce made from fruit from the garden - the last of this season's crop has just been finished but it survived well in the deep freeze and we will try a mandarin sauce that worked wonderfully with pork fillet/tenderloin. Atlantic salmon (not from Tasmania!) works much better than king salmon (but I grew up on the North Atlantic coast where salmon were, in those days, common) so I would say that! The wine is robust, but the nose and flavours respond and develop beautifully. There is always some enticing complexity. I would like to try other wines from this producer.
