The Vineyard
Fruit is grown across Trinity Hill's Hawke's Bay sites, including their prized Gimblett Gravels vines, where low-yielding plants on stony, free-draining soils ripen fully in the region's warm, sun-soaked climate. It is this combination of warmth and drainage that gives Hawke's Bay Merlot its plush fruit and supple structure.
About Trinity Hill
Trinity Hill was founded in 1993 as one of the early pioneers of Hawke's Bay's Gimblett Gravels, the free-draining, stony district laid down by the old Ngaruroro River and now recognised as one of New Zealand's benchmark sites for Syrah and Chardonnay. The idea was hatched over dinner at London's Bleeding Heart restaurant, and more than thirty years on the winery is known internationally for its food-friendly, terroir-driven reds and whites, led by its icon Syrah, Homage. Chief winemaker Warren Gibson has guided the cellar since 1997, a quality-over-quantity approach that has made Trinity Hill a fixture on serious restaurant lists.
Perfect with a slow-roasted beef, herb-crusted lamb, or a rich mushroom and beef pie. The plush fruit and soft tannins are made for hearty, savoury dishes.
