Tasting Notes
A quintessential Cabernet Sauvignon of power and poise. Intense aromas of ripe blackberries and blackcurrants, complemented by a beautiful floral perfume and hints of fresh cedar, dried herbs and toast. Rich and concentrated in the mouth yet retains the elegance, structure and restraint characteristic of great Cab Sauv. Ripe black fruit flavours, savoury oak, fine-grained tannins and succulent acidity combine to produce an authoritative, vibrant and textural palate and exceptionally long finish.

The Vineyard
The Prison Block takes its name from a three-quarter-hectare block in the Gimblett Stones vineyard, behind Roys Hill, once earmarked for a regional correctional facility. Planted in Clone 337 Cabernet Sauvignon, it gives tiny, deeply coloured berries with concentrated flavour. Hand-harvested and fully de-stemmed to whole berries, the wine spent 19 to 29 days on skins before maturing in new 225-litre French oak barriques.
About Trinity Hill
Trinity Hill was founded in 1993 as one of the early pioneers of Hawke's Bay's Gimblett Gravels, the free-draining, stony district laid down by the old Ngaruroro River and now recognised as one of New Zealand's benchmark sites for Syrah and Chardonnay. The idea was hatched over dinner at London's Bleeding Heart restaurant, and more than thirty years on the winery is known internationally for its food-friendly, terroir-driven reds and whites, led by its icon Syrah, Homage. Chief winemaker Warren Gibson has guided the cellar since 1997, a quality-over-quantity approach that has made Trinity Hill a fixture on serious restaurant lists.
Perfect with a rib of beef, venison, or aged hard cheese. Its firm tannins and dark-fruit power are built for rich, special-occasion red meat.
